Millionaires Popcorn Bars

You have probably heard about millionaires shortbread, but have you ever tried to swap the shortbread with popcorn? I have and I can tell you that it is delicious

Millionaires bars usually contain some sort of base {traditionally shortbread}, a gooey caramel and a snappy chocolate layer. Here I have made a chocolaty, yet gooey popcorn base, a delicious date and peanut caramel and a pretty epic chocolate top. The chocolate I used was of course VGAN, but feel free to use any chocolate you want! They can be a bit crumbly, but they are absolutely incredible, so I would not hesitate making these for one second

Ingredients
    Base
  • 1 liter popped popcorn (salted)
  • 3 tablespoons coconut oil
  • 2 tablespoons agave syrup (sub another liquid sweetener)
  • 70 grams dark chocolate (I used VGAN Sugarfree Chocolate)
  • Caramel
  • 8 tablespoons peanut butter (salted)
  • 240 grams dates (pitted)
  • Water
  • Topping
  • 70 grams vegan chocolate (I used VGAN Hazelnut & Mulberry Chocolate)
Instructions
    Base
  1. Melt the coconut oil, syrup and chocolate together

  2. Stir through the popcorn until every kernel is covered and press into a lined dish and place in the fridge

  3. Caramel
  4. Blend the peanut butter and dates together until a thick paste is formed

  5. Thin with water until you get a more spreadable consistency 

  6. Spread the caramel over your base {it helps to use wet hands} and place it back in the fridge

  7. Topping
  8. Melt your chocolate and pour it over your caramel

  9. Place everything in the fridge or freezer for minimum an hour to firm up before cutting into bars and serving
