Chocolate Peanut Brownies

Ingredients
    Brownie Batter
  • 1 jar black beans (230 grams in drained weight)
  • 6 tablespoons peanut butter
  • 3 tablespoons brown sugar (I used NorSweet Brown)
  • 2 tablespoons vegan white sugar (I used Norsweet White)
  • 1 teaspoon vanilla extract
  • 3 tablespoons date syrup (sub maple syrup/agave)
  • 2 tablespoons coconut flour
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • Chocolate Sauce
  • 1 tablespoon cocoa powder
  • 1 tablespoon brown sugar (I used NorSweet Brown)
  • Water to thin
  • Peanuts to top
Instructions
    Brownie Batter
  1. Preheat oven to 180°C

  2. Blend the beans, peanut butter, sweeteners and date syrup until smooth in a food processor or high speed blender

  3. Add the rest of the ingredients and blend again until you get a thick batter, thin with some water if necessary

  4. Add the batter to a lined tin {I used an Ikea glass tupperware container} and bake for 25 minutes. Let it cool for a bit before removing from the tin and decorating

  5. Chocolate Sauce
  6. Combine everything together until a thick, but runny sauce is formed. Pour over your brownies and sprinkle some peanuts over the top
