Summer Rolls with Peanut Sauce

This is my all time favourite summer food, it is so refreshing to eat and of course super fun to make! And of course paired with an amazing peanut sauce, you can’t really go wrong

You can stuff your reach paper wrappers with what you want, but I love fresh veg and some sort of umami source. This time I made some incredible flavourful aubergine and it was just delicious. You can of course use the same marinade for tofu, tempeh or other veggies. The peanut sauce can also be made with any other nut butter that you like, but peanuts stay supreme in this household hehe. This recipe was made in partnership with CSL Store and I used coconut products from Green Life Coco

Instructions

Glazed Aubergine

  1. Fry the aubergine in some oil until golden, then add the rest of the ingredients and cook until everything is nice and sticky

Peanut Sauce

  1. Combine everything together and thin with water if necessary

Summer Rolls

  1. Wet your wrappers one by one, I like to do this under warm running water for about 20-30 seconds. It should still be able to hold its shape, the wrapper will soften more as it sits

  2. Place your wet wrapper on a wooden cutting board and add your fillings. Wrap everything up like a burrito, try to do it as tight as possible 

  3. Cut your finished roll in half or enjoy as is!

-This is great served at parties where everyone can make their own. Just place a large shallow bowl with warm water un the table for everyone to dip their rice papers in

-This is also great with sweet chili sauce if you don't enjoy creamy sauces

    This recipe was perfect after a long day at the office: simple, super fast and light, so perfect for a late dinner.
    I did not have any aubergine so I used corn and tomato. I’m curious about the combination between the glazed aubergine and the peanut sauce or the sweet chili sauce, I’ll try for sure.

    This is a nice reminder about how to enjoy a simple and comforting meal, thank you !
