Peanut Cauliflower Oats

Now, I know cauliflower oats sound disgusting, but hear me out. If you really cook the cauliflower rice down for quite some time, the texture just turnes out absolutely incredible in my opinion. You can't taste it, but it adds volume and a very fun texture. If you want to include more vegetables in your diet, this is one great hack. Please don't knock it until you've tried it, this is definitely one of my favourite breakfasts

Ingredients
  • 1/2 cup oats
  • 1/2 cup cauliflower rice
  • 1 tablespoon vegan vanilla protein
  • 1 tablespoon peanut flour
  • 1 tablespoon ground flax (optional)
  • Pinch of salt
  • 1 cup oat milk
Instructions
  1. Cook everything in a pan until thick and creamy

  2. Add your toppings and enjoy. Here I had a peach, frozen berries and some vegan chocolate by LoveRaw
