Peanut Butter Banana Bread

I'm always craving banana bread, and for a good reason. This is my best recipe to date, and it is completely gluten and refined sugar free. How good is that? And no, it is NOT lacking in flavour!

This banana bread was also made in partnership with my favourite chocolate company which I keep mentioning {sorry not sorry}, VGAN. I used the Hazelnut & Mulberry bar this time and yes, I have nothing else to say then.... deliciousness. So yeah, I hope you enjoy this one! Just know that it won't last long so don't share with too many of your friends

Ingredients
    Banana Bread
  • 1 flax egg (1 tbs ground flax + 3 tbs water)
  • 3 ripe bananas
  • 120 grams peanut butter (smooth or crunchy)
  • 1/2 teaspoon apple cider vinegar
  • 100 grams oat flour
  • 20 grams almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 70 grams vegan chocolate (I used VGAN Hazelnut & Mulberry)
Instructions
    Banana Bread
  1. Preheat oven to 180°C

  2. Mash the bananas with the peanut butter and stir in the flax egg

  3. Add the rest of the dry ingredients + 3/4 of your chopped chocolate and mix

  4. Pour the batter into a lined or greased loaf tin and sprinkle over the remaining chocolate

  5. Bake for 30-35 minutes, let the loaf cool for 10 minutes in the tin before removing and cooling completely before slicing and enjoying!
